Barszcz (but the white one, not red)

It’s been a minute. Sorry. It is still soup season though, and the weather is staying cold. No anecdote, just one of my favorite Polish soups made from a packet (but elevated) for 2 in a bread bowl.

Ingredients

  • 1 Packet Of White Borscht - Zurek

  • 1 Yellow Onion

  • 2-3 garlic cloves

  • 6-8 strips of bacon

  • 16-20 ounces of water

  • 1 bullion cube

  • 1 -3 Tbs of milk or heavy cream

  • 1 kielbasa link (don’t NOT use oscar meyers unless that’s all that’s accessible)

  • 1 large loaf of pheasant style bread

  • 1-2 pounds of baby yellow potatoes (or more if your heart desires)

  • Optional: bay leaf or peppercorns

Directions

  1. Slice and crisp up some bacon.

  2. Dice onion and garlic.

  3. In 8 oz of cold water - empty Borscht mixture into glass

  4. Set bacon aside, sauté onion and garlic in the bacon grease until fragrant and translucent

  5. Add your cube of bullion into the pot for added flavor.

  6. Add 16 oz of water.

  7. Quarter (or smaller) your yellow baby potatoes, add them into the pot.

  8. Cook potatoes through.

  9. Add 8oz soup mixture from glass into pot

  10. Simmer for 10-15 minutes

  11. Add cream or milk

  12. Carve out a bowl in bread. Try not to go to deep in on the sides, otherwise soup will leak out - please learn from my mistake. :)
