I had to really trust the process on this one… who cares about the shape, they were delicious.
Dough
Ingredients
1 packet of dry yeast
1 cup and 1 Tbsp of flour
6 tablespoons of sugar
4 tablespoons of butter
1 egg
1.5 cups of milk
Pinch of salt
Directions
In one bowl combine yeast, 1 Tbsp of flour, 1 Tbsp of sugar, and 1.5 cups of warm (NOT HOT) milk. Set aside for 15 minutes.
Sift 1 cup of flour, remaining sugar, and salt. Make a little well.
Add liquid yeast mixture and combine until crumbly.
Add egg and mix well, and add melted butter to mix again.
Set aside for 1.5 - 2 hours
Crumble, Egg Wash, and Blueberries
Crumble
4 tablespoons of flour
1-2 tablespoons of butter
1 tablespoon of powdered suger
Combine all ingredients by pinching!
Egg Wash
1 egg yolk
2 tablespoons of milk
Mix well
Blueberries
I used a packet of the Trader Joe’s wild blueberries pack and 1 tablespoon of cornstarch
Final Steps
Roll out your dough on a well floured surface.
Cut it up into 8-10 pieces. Roll out each individual piece, and add 1-2 tablespoons of blueberry mixture.
Fold dough over the blueberries, structure doesn’t matter, this dough has a mind of its own.
Rest on a sheet pan lined with wax paper for 15 minutes.
Brush each blueberry bread with egg wash, and sprinkle the crumble.
Baked on 375 F for 20 minutes!
